Ingredients
- 200 g Swedish falukorv sausage
- 160 g dry pasta, such as fusilli
- ½ yellow onion
- 1 garlic clove
- about 200 ml crushed tomatoes
- 1 tsp light soy sauce
- A few drops of Worcestershire sauce
- 1 tsp dried oregano
- 1 tbsp Swedish-style chilli sauce
- Black pepper to taste
- A little oil for frying
- Up to 100 ml pasta cooking water
- A little grated Parmesan and fresh parsley to serve
Method
- Bring a pot of lightly salted water to the boil. Cut the falukorv into half-moons, chop the onion and finely chop the garlic.
- Cook the pasta according to the packet instructions until it still has a little bite. Save about 100 ml of the cooking water before draining the pasta.
- Heat a little oil in a large frying pan. Brown the sausage over medium-high to high heat for about 3–4 minutes until nicely coloured.
- Lower the heat a little and add the onion. Fry for about 2–3 minutes until softened. Stir in the garlic and cook for another 30 seconds or so.
- Add the crushed tomatoes, soy sauce, Worcestershire sauce, oregano, chilli sauce and black pepper. Simmer gently for about 5 minutes while the pasta cooks. Taste before adding any salt, as the sausage and soy sauce are already salty.
- Toss the drained pasta through the sauce. Add the reserved pasta water a little at a time, up to about 100 ml, until the sauce coats the pasta. Heat through, then finish with grated Parmesan and parsley.
