Ingredients

  • 400 g Swedish falukorv sausage
  • 1 apple, about 150 g
  • 1 yellow onion, about 120 g
  • 150 ml cooking cream
  • 1 tbsp Dijon or regular mustard
  • 1 tsp mild curry powder
  • ½ tsp paprika
  • ¼ tsp black pepper
  • 75 g grated cheese
  • 800 g floury potatoes for the mash
  • 150 ml milk for the mash
  • 25 g butter or margarine for the mash
  • ½ tsp salt for the mash, or to taste
  • ⅛ tsp white pepper for the mash
  • ⅛ tsp ground nutmeg for the mash (optional)
  • 1 tsp salt for the potato cooking water

The times are estimates and assume the potatoes cook while the sausage bakes. Thin onion slices and even potato pieces help everything finish together.

Method

  1. Heat the oven to 225°C conventional (about 200°C fan). Peel the potatoes and cut them into even pieces. Cut the falukorv into slices about 1 cm thick. Core and thinly slice the apple. Peel the onion and cut it into very thin half-moons.
  2. Arrange the falukorv, apple and onion in overlapping layers in a baking dish. Mix the cream, mustard, curry powder, paprika and black pepper. Pour over the sauce and sprinkle with the grated cheese.
  3. Bake in the middle of the oven for about 20–25 minutes, until the cheese is golden, the sauce bubbles and the onion is tender. If the onion needs longer, bake for a few more minutes and cover with foil if the cheese is already well browned.
  4. Meanwhile, cover the potatoes with water, add 1 tsp salt and bring to the boil. Simmer for about 18–20 minutes until completely tender. Gently warm the milk while they cook.
  5. Drain the potatoes thoroughly and let them steam dry for a minute. Mash with a potato masher or use a ricer. Gently stir in the butter and warm milk, a little at a time, until creamy. Season with salt, white pepper and optional nutmeg. Avoid overworking the mash, which can make it gluey.
  6. Serve the curry falukorv bake with the mashed potatoes. Tomato and cucumber make a refreshing optional side.
