Ingredients
- 300 g cooked smoked pork loin (Swedish kassler)
- 1 apple (about 150 g)
- 100 g yellow onion
- 100 g carrot
- 150 ml uncooked rice
- Water and salt for the rice according to the packet
- 1 tbsp cooking oil
- 1 tsp honey
- 1 tsp soy sauce
- 1 ml ground black pepper
- 40 g lettuce, optional to serve
- 100 g cucumber, optional to serve
- 100 g cherry tomatoes, optional to serve
Timing is approximate and assumes the rice cooks alongside the other ingredients. Use cooked Swedish kassler, which only needs browning and heating through. The side vegetables are optional. Photo: the Lundin family, with the background edited and serving vegetables added digitally.
Method
- Cook the rice according to the packet. Choose rice with a cooking time of about 15–20 minutes to have the meal ready in around 25 minutes. Prepare the remaining ingredients while it cooks.
- Cut the smoked pork into slices about 1 cm thick. Wash, core and finely dice the apple. Peel and thinly slice the onion. Peel and coarsely grate the carrot.
- Heat half the oil in a frying pan over a medium heat. Fry the onion for about 3 minutes. Add the carrot and apple and fry for another 4–5 minutes, until starting to soften. Fold in the cooked rice and keep warm, covered, over a low heat.
- Heat the remaining oil in another frying pan over a medium heat. Fry the pork for about 2 minutes per side until browned and heated through. Lower the heat, add the honey, soy sauce and black pepper, and turn the slices in the glaze for about 30 seconds.
- Serve the pork with the apple and onion rice. For optional vegetables as pictured, wash the lettuce, slice the cucumber and halve the cherry tomatoes, then arrange alongside the meal.
